Perivian Yellow potatoes are first cooked in boiling water, drained, peeled, and cut in medium dices.Then traditionally dried in the sun in a cold environment, losing all their moisture ready to be preserved & stored for a very long time.
It’s commonly used in the hearty Peruvian meat and potato stew.
Also been ground to make a type of flour, used in drinks,desserts and savory dishes and breads.
