ANNATTO (ACHIOTE) PASTE

Annato is a seed from ‘Axiote Tree’, has peppery scent with slightly bitter sweet flavor. Produces reddish yellow color. Used to make different dishes of typical Yucatecan region. It has a slight peppery taste (not too strong), and it has vitamin C, iron and proteins
The Annatto / Achiote paste is commonly usedas a food coloring agent to color soups, rice and meat, and also use to color margarine, cheese, microwave popcorn, and other yellow or orange foodstuffs.
To use: In a small bowl, break up the Achiote paste, mash with a fork, add the lime juice, vinegar, oil, garlic and Chipotle sauce. Mix to combine then add the salt and pepper and taste for seasoning.
