Candlenuts, also known as ‘Kemiri Nut / Kukui Nut’, is the fruit of the Candle-berry. The nuts are very oily and when roasted, candlenuts loses its toxicity, gives a pleasing, nutty, almond-like flavor. Mostly used in many Asian dishes for enrichment or as a thickening agent.
Roasted Candlenuts can be crushed or ground up finely and mixed with shallots, garlic, and chili peppers to produce a thick sauce used in savory dishes that is eaten with vegetables and rice.
